汉食府其实开业有好一阵儿了,但一直低调经营,几乎没有大范围宣传,仅靠口碑一传十十传百,却获得了相当的人气和粉丝。通过100名迪拜的美食素人的评选,在80余家迪拜中餐厅中脱颖而出,位列2017年迪拜人传媒中餐评选第六名的骄人位置。可以说是近年来迪拜中餐界杀出的一匹黑马。
汉食府商务港老店
汉食府总体来说是一家小店,虽然小本经营但却对美食有着苛刻的态度,以可以看得见吃得到的用心取得佳绩。自在迪拜写字楼区的商务港(business bay)积蓄两年内功之后,于2018年末入驻城西Springs Souk购物中心高调开业,成为少数入驻购物中心的正宗中餐厅,也是少数真正将传统中餐弘扬至外国市场的中餐厅。看来曾经的黑马如今也成长为巨兽,俘获着迪拜挑剔的美食家们。
汉食府Springs Souk新店
Springs Souk的新店相比老店有着许多优势,更大的面积,更好的环境,更便捷的位置、更多的停车位、更丰富的周边资源以及更新的菜品,可以说就餐体验比老店提升了好几个档次。
创始人是一个新加坡籍华人女性,本身是个吃货,开餐厅是副业,主职是少见的电视台的动画设计师,可谓两头兼顾,应付自如,实在令人佩服。好在有设计师光环加身,对美学又有偏执,为了省钱,汉食府的所有店面及平面设计均由老板一个人完成,却丝毫不输专业的设计公司。
整体采用不浮夸的黑金色新中式风格,在有限的空间里兼具雅致和新潮,也符合中西方的共同审美。而店门口的中式镂空窗,则可以搭载不同的主题和装饰元素,每一个节庆日都可以”盛装打扮”,提升氛围,可以说是非常精彩的设计,也成为许多过往路人争相拍照的”景点”。
新店仅仅依靠回头客,就能做到经常性的一座难求,周末的晚餐基本是爆满的。难得的是新店中外客人的数量大约可对半开,足矣见得如今外国人已经开始倾向于未改良的传统中餐,只要定位合理和营销到位,传统中餐也可以获得外国食客的认可。
汉食府主营粤菜,搭配一些川菜,属于中外通吃的菜系搭配,所有菜品未做任何改良,主厨功底深厚,每一道菜都可圈可点,而且性价比也很高,能获得中外食客的认可我个人并不意外。
芥末炸虾球
前菜里的招牌,也只有堂吃才能发挥出最大威力的菜。刚做出来的虾球外层酥脆,内核饱满,之后是一股通气的芥末冲出,味道是一层层涌现出来的。不过外卖不建议点这道,时间一久外层的脆皮塌下来就质量大减了。
避风塘茄子
汉食府的茄子类料理都很棒,避风塘的做法常见于虾蟹,很少见到茄子也来避风塘的,但事实证明用作茄子的口感也确实独特,外层酥酥的,里面则是茄子绵软的口感,非常惊喜的味道。另外她家的咸鱼粒茄子煲个人也非常喜欢。
广式烧鸭
餐厅招牌菜,单以烧鸭来看算是迪拜不可多得的。香浓鲜美,入味多汁,光拌这鸭油我都能吃下好几碗饭。不过烧鸭每天有限量,不做隔夜鸭,当天卖完就没了。如果外卖也想吃烧鸭又不想点太多,也可以考虑他家的烧鸭盖饭。
药材鸡
餐厅新的招牌菜,这道菜老店好像是没有的。药材鸡是新加坡的鸡料理,用各种药材与整只鸡一起蒸出来的。鸡肉被蒸的极嫩,用筷子就能剔骨吃肉,而鸡汤鲜而清美,适合喜欢清淡口味的朋友。整道菜夹杂的药膳的清新香气,是养生健康类的大补菜。不过同样是限量菜,卖完就没有了。
剁椒鱼头面
这个面是笔者的最爱,如果你是无辣不欢的勇士,那么这碗爆辣的剁椒鱼头面可以让你心满意足。鱼头采用的是三文鱼鱼头,在猛烈的辣意下已经感觉不到腥味,只有辛辣,而三文鱼独特的油脂和肉质会让这碗面更加充满多层次的口感。面则是普通宽面,拌之有着不俗的鲜味,一份不够的,还可以额外加面。剁椒鱼头面也是限定菜,当天如果没有好鱼头,餐厅就不做,建议提前预定啦。
辣子鸡
相比很多馆子的辣子鸡为了迎合大众口味都做的不怎么辣,汉食府的辣子鸡可是下足了猛料,采用来自重庆的辣酱和花椒,一口就能感受到浓烈的辣意。鸡肉不干不柴,鲜嫩有味,还能享受从辣椒里挑肉吃的悠闲感。喜欢吃辣的朋友可以尝试。
清蒸鱼
其实好的蒸鱼卖相都是不好的,新鲜的鱼鱼皮和鱼肉会爆开,看着不甚美观,但味道实则是最好的,嫩滑的鱼肉搭配鲜咸的酱汁和葱油,是很纯正的粤菜味道。而那些端上来看上去板板整整的蒸鱼或许与本身就不够新鲜了。
牛腩煲仔饭
汉食府几乎有着迪拜最好的煲仔饭,从卖相和口味都令人值得赞赏,也是外卖中比较热门的一款。酱汁和米饭比例适中,渗透下去让每一口米饭都比较入味,而有气力把锅巴刮下来吃掉的可谓真正的吃货。
炸鲜奶
来自广东顺德的传统名点,迪拜不常见。外酥脆、内软嫩。酥脆的外皮包裹着浓郁的鲜奶。广东朋友吃过后表示相当正宗。
总的来说,汉食府的出品质量是很高的,无论粤菜还是川菜都得心应手,远高于一般小作坊的水平,有着吃得出品得到的功力。早期汉食府以外卖起家,确实有点浪费大厨的浑身厨艺了。而Springs Souk新店的开业,大家都可以更方便地感受汉食府堂吃的魅力。
同时,作为一家开在商场里的中餐厅,汉食府的性价比可谓超高,在这样的质量下,人均70-100迪拉姆可谓良心之作。非常建议喜爱中餐的朋友前去品尝。
